The term 'upside down' is not always positively speaking. However, on this day, it is definitely a day to be upside down and lovin' it! When it comes to baking, this delight was originally made in a skillet, thus, called 'skillet cake'. Fruit was placed in the skillet with batter poured on top, then, baked, inverted and voila! the bottom becomes a beautifully decorated top.
